Curried Eggplant
Eggplant is technically a fruit, not a vegetable, and is a member of the nightshade family.

Cut the eggplant into cubes and soak in salted water for 10 minutes.

In a pan, heat vegetable oil and sauté the onion, garlic, and ginger until fragrant.

Add the tomatoes and cook until they soften.

Drain the eggplant and add it to the pan. Stir in the curry powder, turmeric powder, cumin powder, coriander powder, and salt.

Cover and simmer for 15-20 minutes, or until the eggplant is tender.

Garnish with fresh cilantro before serving.
