Coconut is not actually a nut, but a fruit!
This is vegan and gluten free recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 7.

Preheat the oven to 350°F (175°C).

In a large bowl, combine the shredded coconut, almond flour, dried cherries, maple syrup, coconut oil, vanilla extract, and salt. Mix well.

Take small portions of the mixture and shape them into bite-sized chews.

Place the chews on a baking sheet lined with parchment paper.

Bake for 10 minutes or until the edges turn golden brown.

Remove from the oven and let them cool on the baking sheet for 5 minutes.

Transfer the chews to a wire rack and let them rest for 30 minutes.
