Peel and chop the carrots, parsnips, and sweet potatoes into small cubes.

Place the chopped vegetables, onion, and garlic cloves on a baking tray.

Drizzle with olive oil, cumin, coriander, turmeric, salt, and black pepper.

Toss to coat the vegetables evenly.

Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and slightly caramelized.
