Leblabi is a traditional Tunisian soup often enjoyed during Ramadan.

Soak the chickpeas overnight and drain.

Heat olive oil in a large pot and sauté onion and garlic until translucent.

Add cumin, coriander, harissa paste, and tomato paste. Cook for 1-2 minutes.

Add chickpeas and vegetable broth. Bring to a boil, then reduce heat and simmer for 1 hour or until chickpeas are tender.

Blend half of the soup until smooth, then return to the pot.

Stir in lemon juice and salt. Cook for another 5 minutes.

Serve hot, garnished with fresh cilantro.
