Reduce heat, cover, and simmer for 20 minutes or until pumpkin is tender. Use an immersion blender to puree the soup until smooth. Stir in coconut milk, salt, and black pepper. Cook for another 5 minutes. Serve hot, garnished with chopped parsley.
