Vegan Japanese Eggplant Dog
Japanese eggplants are thinner and longer than regular eggplants, making them perfect for grilling and roasting.

Preheat the grill or oven to medium-high heat.

Slice the Japanese eggplants in half lengthwise.

In a small bowl, whisk together olive oil, soy sauce, rice vinegar, maple syrup, garlic powder, onion powder, and smoked paprika to make the marinade.

Brush the marinade onto the cut sides of the eggplants.

Place the eggplants on the grill or in the oven, cut side down, and cook for about 10 minutes, or until tender and lightly charred.

While the eggplants are cooking, toast the hot dog buns on the grill or in the oven.

Once the eggplants are cooked, remove them from the heat and let them cool slightly.

Place each eggplant half in a hot dog bun.

Garnish with sliced green onions and sesame seeds.
