Heat oil in a pan. Add garlic and ginger, saute for a minute.

Add ground chicken and cook until browned.

Add carrots, red bell pepper, and water chestnuts. Stir fry for 2-3 minutes.

Add soy sauce and sesame oil. Cook for another minute.

Remove from heat and mix in chopped green onions and peanuts.

Serve the chicken mixture in lettuce leaves.
