Preheat the oven to 200°C (400°F).

Wash the potatoes and pat them dry.

Prick the potatoes all over with a fork.

Rub olive oil, salt, and black pepper over the potatoes.

Place the potatoes on a baking sheet and bake for about 60 minutes, or until the skin is crispy and the inside is soft.

Remove from the oven and let them rest for 10 minutes.

Cut a cross on top of each potato and gently squeeze to open.
