Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until onion is translucent.

Add diced carrot, potato, and tomato to the pot. Stir well.

Pour vegetable stock into the pot and add bay leaf and thyme. Season with salt and pepper.

Bring the soup to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.

Remove bay leaf from the soup. Use an immersion blender to puree the soup until smooth.

Serve hot, garnished with chopped parsley.
