  2. Cut the zucchini in half lengthwise and scoop out the flesh, leaving a thin shell.
  3. Place the zucchini skins on a baking sheet and brush them with olive oil.
  4. Sprinkle salt, black pepper, and garlic powder over the zucchini skins.
  5. Bake for 15 minutes or until the skins are tender.
  6. Remove from the oven and sprinkle Parmesan cheese and fresh parsley over the zucchini skins.
  7. Return to the oven and bake for another 5 minutes or until the cheese is melted and golden.
  8. Let the zucchini skins rest for 5 minutes before serving.
  9. Garnish with additional fresh parsley if desired.
