In a large bowl, combine the grated zucchini, orange zest, orange juice, vegetable oil, eggs, and vanilla extract. Mix well.

In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the zucchini mixture, stirring until just combined.
