Preheat the oven to 325°F (165°C).

In a large bowl, combine the rolled oats, almonds, cashews, pumpkin seeds, sunflower seeds, and chia seeds.

In a small saucepan, melt the coconut oil over low heat. Remove from heat and stir in the maple syrup, vanilla extract, and cinnamon.

Pour the coconut oil mixture over the dry ingredients and mix well until everything is evenly coated.

Spread the mixture onto a baking sheet lined with parchment paper.

Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crispy.

Remove from the oven and let it cool completely.

Once cooled, stir in the dried cranberries and dried apricots.
