Soak the white beans overnight in water.

In a large pot, heat olive oil and sauté onion and garlic until fragrant.

Add soaked beans, vegetable broth, bay leaf, paprika, thyme, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 2 hours or until beans are tender.
