Wild Rice with Bell Pepper and Fennel
Wild rice is not actually a type of rice, but a type of grass seed.

Cook the wild rice according to package instructions.

While the rice is cooking, heat olive oil in a large pan over medium heat.

Add bell pepper, fennel, and garlic to the pan and sauté for 5 minutes until vegetables are tender.

Once the rice is cooked, add it to the pan with the vegetables.

Pour in vegetable broth and lemon juice, and season with salt and black pepper.

Stir everything together and let it simmer for 10 minutes.

Remove from heat and let it rest for 5 minutes.
