  1. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, yeast, honey, and salt. Mix well.
  2. Add olive oil and water to the flour mixture. Stir until a sticky dough forms.
  3. Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise for about 1 hour or until doubled in size.
  5. Preheat the oven to 425°F (220°C). Grease a baking sheet.
  6. Punch down the risen dough and transfer it to the greased baking sheet. Gently press and stretch the dough to form a rectangular shape.
  7. Drizzle olive oil over the top of the dough and use your fingers to make dimples all over the surface.
  8. Sprinkle some salt and dried herbs on top if desired.
  9. Bake in the preheated oven for 15-20 minutes or until the bread is golden brown.
  10. Remove from the oven and let it cool on a wire rack before serving.
