Preheat the oven to 350°F (175°C).

In a large bowl, combine the Wheaties cereal, rolled oats, all-purpose flour, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, mix together the coconut oil, maple syrup, vanilla extract, and almond milk.

Pour the wet mixture into the dry mixture and stir until well combined.

Fold in the raisins and chopped nuts (if desired).

Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
