Preheat the oven to 325°F (160°C).

In a large bowl, combine the rolled oats, walnuts, dates, honey, coconut oil, cinnamon, vanilla extract, and salt. Mix well to ensure all ingredients are coated.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, or until the granola is golden brown, stirring once halfway through.

Remove from the oven and let it cool completely on the baking sheet. The granola will become crisp as it cools.
