  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, blend the walnuts, almond flour, 2 tablespoons of coconut oil, 2 tablespoons of maple syrup, and 1/2 teaspoon of vanilla extract until crumbly. Press the mixture into the bottom of a tart pan.
  3. Bake the crust in the preheated oven for 10 minutes, then remove from the oven and set aside.
  4. Slice the peaches and toss them with lemon juice. In a small bowl, mix cornstarch with 1 tablespoon of maple syrup and add it to the peaches. Stir until well coated.
  5. Arrange the peach slices on top of the crust.
  6. In a blender, combine the coconut cream, cashews, agave syrup, coconut milk, remaining coconut oil, and remaining vanilla extract. Blend until smooth and creamy.
  7. Pour the cashew coconut cream over the peaches.
  8. Bake in the oven for 30 minutes, or until the filling is set.
  9. Remove from the oven and let it cool for at least 1 hour.
  10. Serve chilled and enjoy!
