  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until onion is translucent.
  4. Add curry powder, turmeric powder, cumin powder, coriander powder, salt, and black pepper to the skillet. Stir well to combine.
  5. Add cooked rice to the skillet and mix until well coated with the spice mixture.
  6. Stuff the bell peppers with the curried rice mixture.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, or until the peppers are tender.
  9. Remove the foil and bake for an additional 5 minutes to lightly brown the tops.
  10. Garnish with fresh cilantro and drizzle with lime juice before serving.
