In a large bowl, mix the gluten-free flour blend, salt, and baking powder.

Add the dairy-free margarine and rub it into the flour mixture until it resembles breadcrumbs.

Gradually add the ice-cold water, mixing until the dough comes together.

Divide the dough into two equal portions and shape each into a disc. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Roll out one disc of dough on a lightly floured surface until it is about 1/4 inch thick.

Cut out desired shapes using cookie cutters or a sharp knife.

Place the pastry shapes onto the prepared baking sheet and bake for 15-20 minutes, or until golden brown.

Repeat with the remaining dough.

Allow the puff pastry to cool completely before using in your desired recipe.
