  1. In a large mixing bowl, combine the mixed dried fruit, orange zest, grated apple, grated carrot, ground almonds, ground cinnamon, ground nutmeg, ground ginger, breadcrumbs, dark brown sugar, and vegetable suet.
  2. Stir in the almond milk, brandy, lemon juice, and vanilla extract until well combined.
  3. Cover the bowl with cling film and let it rest for 30 minutes.
  4. Grease a pudding basin and spoon the pudding mixture into it.
  5. Cover the basin with a double layer of greaseproof paper and secure it with string.
  6. Place the basin in a steamer and steam for 2 hours.
  7. Remove the pudding from the steamer and let it cool for 10 minutes.
  8. Remove the greaseproof paper and turn the pudding out onto a serving plate.
  9. Serve warm with vegan custard or brandy sauce.
