In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until fragrant.

Add chicken breast and cook until browned.

Add carrots, potatoes, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes or until vegetables are tender.

Remove the chicken breast from the pot and shred it using two forks. Return the shredded chicken to the pot.

Stir in coconut milk and simmer for an additional 5 minutes.

Serve hot, garnished with fresh parsley.
