  2. In a medium bowl, whisk together the gluten-free flour blend, baking soda, and salt.
  3. In a separate large bowl, mix together the melted coconut oil, brown sugar, granulated sugar, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.
  5. Stir in the non-dairy milk until a thick cookie dough forms.
  6. Fold in the dairy-free chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
