  1. Preheat the oven to 180°C (350°F) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Add the sugar, sunflower oil, vanilla extract, and rice milk to the bowl. Mix well.
  4. In a separate bowl, combine the gluten-free flour blend, baking powder, baking soda, xanthan gum, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it cool in the pan for 10 minutes.
