Preheat the oven to 180°C (350°F).

Roll out the gluten-free puff pastry sheet.

In a food processor, combine the artichoke hearts, spinach, garlic, vegan cream cheese, nutritional yeast, salt, and black pepper. Blend until smooth.

Spread the artichoke and spinach mixture evenly over the puff pastry sheet.

Roll up the puff pastry tightly and slice into 12 equal pinwheels.

Place the pinwheels on a baking tray lined with parchment paper.

Brush the pinwheels with olive oil.

Bake for 15 minutes, or until golden brown.
