  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to the package instructions. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  4. Add the bell pepper, zucchini, and spinach to the skillet. Cook until the vegetables are tender.
  5. Stir in the tomato sauce, dried oregano, dried basil, salt, and black pepper. Cook for a few minutes.
  6. Stuff each cooked pasta shell with the vegetable mixture and place them in a baking dish.
  7. Sprinkle vegan cheese on top of the stuffed shells.
  8. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  9. Remove from the oven and let it rest for 10 minutes.
  10. Garnish with fresh parsley before serving.
