Manchurian is a popular Indo-Chinese dish that originated in the Indian subcontinent and is not actually a part of traditional Chinese cuisine.

Chop the cauliflower, carrot, capsicum, green beans, onion, garlic, ginger, and green chili.

In a bowl, mix soy sauce, tomato ketchup, cornstarch, and water to make a smooth sauce.

Heat oil in a pan and fry the cauliflower florets until golden brown. Remove and keep aside.

In the same pan, add garlic, ginger, and green chili. Saute for a minute.

Add onion, carrot, capsicum, and green beans. Stir-fry for 2-3 minutes.

Add the fried cauliflower florets and mix well.

Pour the sauce mixture over the vegetables and stir-fry for another 2-3 minutes.

Season with salt and black pepper powder.

Garnish with chopped spring onions.

Serve hot as an appetizer or with steamed rice or noodles.
