  1. Chop the cauliflower, carrot, capsicum, green beans, onion, garlic, ginger, and green chili.
  2. In a bowl, mix soy sauce, tomato ketchup, cornstarch, and water to make a smooth sauce.
  3. Heat oil in a pan and fry the cauliflower florets until golden brown. Remove and keep aside.
  4. In the same pan, add garlic, ginger, and green chili. Saute for a minute.
  5. Add onion, carrot, capsicum, and green beans. Stir-fry for 2-3 minutes.
  6. Add the fried cauliflower florets and mix well.
  7. Pour the sauce mixture over the vegetables and stir-fry for another 2-3 minutes.
  8. Season with salt and black pepper powder.
  9. Garnish with chopped spring onions.
  10. Serve hot as an appetizer or with steamed rice or noodles.
