Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic cloves. Sauté until onion is translucent.

Add chopped bell pepper, carrot, and zucchini. Cook for 5 minutes.

Add canned tomatoes, kidney beans, corn kernels, chili powder, cumin powder, paprika, salt, black pepper, and cayenne pepper. Stir well.

Pour in vegetable stock and bring to a boil.

Reduce heat to low and simmer for 30 minutes, stirring occasionally.

Remove from heat and let it rest for 10 minutes.

Stir in lime juice and fresh cilantro before serving.
