The first veggie burger was created in London in 1982 by Gregory Sams, a natural foods pioneer.

This is vegan, gluten free and high protein recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 17.

  1. In a food processor, combine chickpeas, quinoa, carrot, red onion, garlic cloves, parsley, cumin, paprika, salt, and black pepper. Pulse until well combined but still slightly chunky.
  2. Transfer the mixture to a bowl and stir in breadcrumbs. Let it rest for 10 minutes.
  3. Shape the mixture into patties and refrigerate for 15 minutes.
  4. Heat olive oil in a pan over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.
  5. Toast the burger buns.
  6. Assemble the veggie burgers by placing a patty on the bottom bun, followed by lettuce, tomato slices, red onion slices, and pickles. Top with the other half of the bun.
  7. Serve and enjoy!
