  1. Peel and dice the sweet potatoes.
  2. Chop the red bell pepper, onion, garlic cloves, and ginger.
  3. In a large pot, heat some oil and sauté the chopped vegetables for 5 minutes.
  4. Add the chili powder, ground cumin, and ground coriander. Stir well.
  5. Add the diced sweet potatoes and vegetable broth. Bring to a boil and simmer for 20 minutes, or until the sweet potatoes are tender.
  6. In a blender, blend the soup until smooth.
  7. Return the soup to the pot and stir in the coconut milk, peanut butter, lime juice, and salt. Simmer for another 5 minutes.
  8. Serve the soup hot, garnished with fresh cilantro.
