Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.

Add pumpkin, kidney beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and black pepper to the pot. Stir well.

Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes until the pumpkin is tender.

Add spinach and cook for an additional 5 minutes until wilted.
