Vegan Chili Beans

Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Cook until softened.

Add chopped carrot and cook for another 2 minutes.

Add chili powder, cumin powder, paprika, salt, and black pepper. Stir well.

Pour in canned diced tomatoes, canned kidney beans, canned black beans, and canned corn. Stir to combine.

Add vegetable broth and bring to a simmer. Cover and cook for 20 minutes.

Serve hot and garnish with your favorite toppings.
