Vegetable nuggets are a healthier alternative to traditional chicken nuggets and are packed with nutritious vegetables.

Boil the potatoes and carrots until tender. Drain and mash them.

In a mixing bowl, combine the mashed potatoes and carrots with green peas, corn kernels, bread crumbs, finely chopped onion, minced garlic, salt, black pepper, and paprika. Mix well.

Shape the mixture into small nugget shapes.

Heat vegetable oil in a frying pan over medium heat. Fry the nuggets until golden brown on all sides.

Alternatively, preheat the oven to 200°C (400°F) and place the nuggets on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until crispy and golden.
