Rinse the basmati rice in cold water and soak for 15 minutes. Drain and set aside.

Heat oil in a large pan and add chopped onion, garlic, and ginger. Saute until golden brown.

Add the mixed vegetables and saute for 2-3 minutes.

Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.

Add the soaked and drained basmati rice to the pan and saute for 2-3 minutes.

Add water and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until the rice is cooked.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and garnish with fresh coriander leaves.

Serve hot with a squeeze of lemon juice.
