In a bowl, mix cottage cheese, grated carrot, diced cucumber, diced bell pepper, mayonnaise, salt, and black pepper.

Trim the edges of the bread slices and flatten them with a rolling pin.

Spread the cottage cheese mixture evenly on each bread slice.

Place a lettuce leaf on top of the mixture.

Roll up the bread tightly and secure with toothpicks.

Heat a little oil in a pan and sauté the bread rolls until golden brown.

Remove from heat and let them rest for 5 minutes.

Serve the vegetable bread roll ups warm.
