  1. In a bowl, mix cottage cheese, grated carrot, diced cucumber, diced bell pepper, mayonnaise, salt, and black pepper.
  2. Trim the edges of the bread slices and flatten them with a rolling pin.
  3. Spread the cottage cheese mixture evenly on each bread slice.
  4. Place a lettuce leaf on top of the mixture.
  5. Roll up the bread tightly and secure with toothpicks.
  6. Heat a little oil in a pan and sauté the bread rolls until golden brown.
  7. Remove from heat and let them rest for 5 minutes.
  8. Serve the vegetable bread roll ups warm.
