Vegetable Biryani

Wash and soak the basmati rice for 30 minutes.

Heat ghee in a large pan and add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste, green chili, and sauté for a minute.

Add chopped tomatoes and cook until they turn soft.

Add turmeric powder, biryani masala powder, and mix well.

Add mixed vegetables, cashews, raisins, and salt. Cook for 5 minutes.

Drain the soaked rice and add it to the pan. Mix gently.

Add water, cover the pan, and cook on low heat until the rice is cooked and the flavors are well blended.

Let it rest for 10 minutes.

Garnish with fresh coriander leaves and mint leaves.
