In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and celery. Cook until vegetables are tender.

Add barley, vegetable broth, diced tomatoes, green beans, peas, dried thyme, bay leaf, salt, and black pepper. Bring to a boil.

Reduce heat, cover, and simmer for 30 minutes or until barley is cooked.

Stir in spinach and cook for an additional 5 minutes.

Remove bay leaf before serving.
