Preheat the oven to 350°F (175°C).

In a large bowl, cream together the vegan butter, brown sugar, and granulated sugar until light and fluffy.

In a small bowl, mix together the flaxseed meal and water. Let it sit for 5 minutes to thicken.

Add the flaxseed mixture and vanilla extract to the butter-sugar mixture and mix well.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Fold in the vegan white chocolate chunks and macadamia nuts.

Drop spoonfuls of dough onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
