Preheat the oven to 375°F (190°C).

Cook the lasagna noodles according to the package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.

Add zucchini, bell pepper, mushrooms, and spinach to the skillet. Cook until vegetables are tender.

Stir in the tomato sauce, dried oregano, dried basil, salt, and black pepper. Simmer for 5 minutes.

In a blender, combine cashews, nutritional yeast, lemon juice, and water. Blend until smooth.

Spread a thin layer of the vegetable sauce in the bottom of a baking dish.

Place a layer of lasagna noodles on top of the sauce. Spread a layer of the cashew mixture on top.

Repeat the layers until all the ingredients are used, ending with a layer of cashew mixture.

Top with fresh basil leaves and vegan cheese.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and golden.

Let the lasagna rest for 10 minutes before serving.
