Cook rice noodles according to package instructions. Drain and set aside.

In a small bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, minced garlic, grated ginger, and red pepper flakes.

In a large skillet, heat a tablespoon of oil over medium heat. Add sliced carrot and cook for 3-4 minutes until slightly softened.

Add cooked rice noodles, spinach, and the peanut butter sauce to the skillet. Toss everything together until well combined and heated through.

Serve the noodles in bowls, topped with sliced green onions, roasted peanuts, and fresh cilantro.
