Shepherd’s Pie traditionally uses lamb or mutton, but this vegan version replaces it with lentils and vegetables while still maintaining the delicious flavor and comforting texture.

  1. Preheat the oven to 375°F (190°C).
  2. Peel and chop the potatoes, carrots, onion, and garlic cloves.
  3. In a large pot, boil the potatoes and carrots until tender. Drain and set aside.
  4. In the same pot, sauté the onion and garlic in olive oil until softened.
  5. Add lentils, vegetable broth, thyme, rosemary, salt, and pepper. Simmer for 15 minutes.
  6. Stir in peas and cornstarch mixed with water. Cook for an additional 5 minutes.
  7. Mash the potatoes and carrots with a potato masher, adding salt and pepper to taste.
  8. In a baking dish, spread the lentil mixture evenly. Top with the mashed potatoes and smooth the surface.
  9. Bake for 30 minutes or until the top is golden brown.
  10. Let it rest for 10 minutes before serving.
