Vegan Pumpkin Spice Cake with Vanilla Maple Frosting and Spiced

Preheat the oven to 350°F (175°C) and grease a round cake pan.

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, and ground ginger.

In a separate bowl, mix together the pumpkin puree, maple syrup, coconut oil, almond milk, vanilla extract, and apple cider vinegar.

Fold the wet ingredients into the dry ingredients until just combined.

Transfer the batter to the greased cake pan and smooth the top.

Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

In the meantime, prepare the frosting by whisking together powdered sugar, vanilla extract, ground cinnamon, ground ginger, nutmeg, cloves, allspice, and almond milk until smooth and creamy.

Once the cake has cooled, spread the frosting over the top using a spatula.

Sprinkle chopped pecans, ground cinnamon, and ground nutmeg on top for decoration.
