Vegan Pumpkin Leek Soup with Smoked Paprika and Homemade Spelt Crackers

Preheat the oven to 180°C (350°F).

In a large pot, heat olive oil over medium heat. Add the leek, onion, and garlic, and sauté until softened.

Add the pumpkin, vegetable broth, coconut milk, smoked paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the pumpkin is tender.

Meanwhile, prepare the spelt crackers. In a bowl, mix together spelt flour, baking powder, and salt. Gradually add water and knead until a dough forms. Roll out the dough on a floured surface and cut into desired shapes. Place the crackers on a baking sheet and bake for 10-12 minutes, or until golden brown.

Once the soup is cooked, use an immersion blender or transfer to a blender to puree until smooth.
