  1. Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened. Add the mushrooms and cook until they release their liquid. Add the spinach and cook until wilted.
  3. In a blender, combine the tomato sauce, cashews, nutritional yeast, basil, salt, and black pepper. Blend until smooth.
  4. In a baking dish, layer the lasagna noodles, mushroom-spinach mixture, and tomato-cashew sauce. Repeat the layers until all the ingredients are used, ending with a layer of tomato-cashew sauce.
  5. Sprinkle vegan cheese on top.
  6. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and golden.
  7. Let the lasagna rest for 15 minutes before serving. Enjoy!
