In a small bowl, mix chia seeds and water. Let it sit for 5 minutes to form a gel-like consistency.

In a large mixing bowl, combine coconut oil, maple syrup, and vanilla extract. Mix well.

Add the chia gel to the bowl and mix until well combined.

In a separate bowl, whisk together almond flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
