Vegan Chow Mein

Chow Mein is a popular Chinese dish that originated in Northern China and has become a staple in Chinese-American cuisine.

Cook the noodles according to package instructions. Drain and set aside.

In a small bowl, whisk together soy sauce, sesame oil, cornstarch, water, salt, and black pepper. Set aside.

Heat vegetable oil in a large pan or wok over medium heat. Add garlic and ginger, and cook for 1 minute.

Add tofu and stir-fry until lightly browned.

Add mixed vegetables and cook for 2-3 minutes, until tender.

Push the vegetables and tofu to one side of the pan and pour the sauce into the other side. Cook for 1 minute, then mix everything together.

Add the cooked noodles and green onions to the pan. Stir-fry for another 2-3 minutes, until heated through.
