  1. Soak the Chinese mushrooms in hot water for 15 minutes. Drain and slice.
  2. Trim the ends of the baby bok choy and separate the leaves.
  3. Heat sesame oil in a large pan over medium heat. Add garlic and ginger, cook until fragrant.
  4. Add sliced mushrooms and cook for 5 minutes.
  5. Stir in soy sauce, vegetable broth, salt, and black pepper. Bring to a simmer.
  6. Add baby bok choy leaves and cook for another 3 minutes.
  7. In a small bowl, mix cornstarch with 2 tablespoons of water. Stir into the pan and cook until the sauce thickens.
  8. Garnish with sliced green onions and toasted sesame seeds.
