Soak the Chinese mushrooms in hot water for 15 minutes. Drain and slice.

Trim the ends of the baby bok choy and separate the leaves.

Heat sesame oil in a large pan over medium heat. Add garlic and ginger, cook until fragrant.

Add sliced mushrooms and cook for 5 minutes.

Stir in soy sauce, vegetable broth, salt, and black pepper. Bring to a simmer.

Add baby bok choy leaves and cook for another 3 minutes.

In a small bowl, mix cornstarch with 2 tablespoons of water. Stir into the pan and cook until the sauce thickens.

Garnish with sliced green onions and toasted sesame seeds.
