Despite its name, vegan beef chili does not contain any actual beef. It gets its meaty texture and flavor from plant-based ingredients such as beans and vegetables.

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, and carrot. Saute for 5 minutes until vegetables are softened.
  3. Add diced tomatoes, kidney beans, black beans, corn kernels, vegetable broth, chili powder, cumin powder, paprika, salt, black pepper, and cayenne pepper. Stir well.
  4. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally.
  5. Remove from heat and let it rest for 10 minutes.
  6. Stir in lime juice and fresh cilantro.
  7. Serve hot with sliced avocado on top.
