  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a small bowl, mix together flaxseed meal and water. Set aside for 5 minutes to thicken.
  3. In a large mixing bowl, mash the ripe bananas.
  4. Add the flaxseed mixture, coconut oil, maple syrup, and vanilla extract to the mashed bananas. Mix well.
  5. In a separate bowl, whisk together whole wheat flour, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the greased loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
