Peel and core the apples, then grate them using a box grater.

In a large mixing bowl, combine the grated apples, oats, almond flour, coconut oil, maple syrup, cinnamon, baking powder, vanilla extract, and salt. Mix well until all the ingredients are evenly combined.

Line a baking sheet with parchment paper. Scoop spoonfuls of the cookie dough onto the prepared baking sheet, leaving some space between each cookie.
